Anchovies Liver is a Source of Polyunsaturated Fatty Acids

Specialists from Spanish university Almeria propose to pay more attention to fish liver. According to them, it is a unique source of polyunsaturated acids, which form the basis of the lipid layer of membranes. This layer protects cells from harmful effects of free radicals and by means of that helps to prevent certain diseases, including cardiovascular ailments, problems with the endocrine system, metabolic disorders and diseases of gastrointestinal tract.

Thus, the scientists were investigating the liver of 12 fish species. But only in anchovies liver they found the highest rate of polyunsaturated fatty acids (47.9%). Experts underline: “Unfortunately liver of this fish is rarely used in food industry. Although, cod liver is often used in medical treatment. Usually in the process of fish cleaning liver is being removed first.”

Meanwhile, liver can become a real salvation for many people. It contains fatty acids such as eicosapentaenoic and docosahexaenoic. For example, there is a point of view that eicosapentaenoic acid effectively helps with depression treatment by restoring normal level of serotonin. And DHA does not permit to accumulate fat in body and plays a key role in the process of brain forming and is useful for the cerebral circulation. This acid is also a major component of the gray matter in brain, retina, testes, and sperm cell membranes.
